Shoepeg Corn Dip

 Originally, this appetizer posted in October amidst a long Halloween post.  Re-posting today with the recipe only for a few fun link-ups!  

Remember this Hot Corn Dip I posted a few weeks ago?    Today's recipe is served cold, and is equally as delicious and always pleases a crowd!  Perfect for your next summer get-together!  
This tried and true recipe belongs to a dear family friend, and it became a staple on our Grove table at Ole Miss football games when I was in college.  To this day, it remains one of my favorites!

Shoepeg Corn Dip
1 can shoepeg corn (10 oz), drained
1/2 cup light sour cream
1/2 cup mayo (Hellman's or Dukes)
2 1/2-3 cups grated sharp cheddar cheese
1/3 cup chopped green onions (3 or 4)
Lea and Perrins (5 or 6 shakes)
Tony Chachere's Creole Seasoning (5 or 6 shakes or more if desired)
Frito's Scoops

Mix all together except Frito's.  Best if made several hours or 1 day before to allow flavors to mingle.  Serve cold with Frito's Scoops.  Forget self-control.  It is too yummy!

I do one pretty much like this and am expected to have this at all of our parties. I have one friend I make "extra" for to take home(she doesn't think it could be that easy)
