This simple queso is one of out standby's for casual get-togethers and occasionally it's dinner itself, but don't tell anybody we do that! My good friend, Kayla, shared this with me.
This is quick, simple queso is a hearty appetizer, a delicious topping for nachos or a hot dogor dinner on a Friday night.
Queso with Meat
2 lb. block Velveeta cheese
1 large can chili-no beans
2 cans cream of mushroom soup
2 cans Rotel tomatoes
Cut Velveeta into cubes for faster melting. Add all ingredients to a crock pot, mixing well. Heat on low for about 2 hours or on high until cheese melts completely.
Serve hot straight from the crock pot.
**This recipe makes a very large batch, so I usually half the recipe for just our family.

I have made a version of this many times...I love that you guys have it for dinner! When my kids were home sometimes we went to the local ice cream store and got ice cream for dinner. I loved it...they were always so excited. Enjoy!

i make something similar... velvetta, sausage, chopped onion, rotel, and diced chilis. I cook in the crockpot and it is delish!
