This will be our third summer to grow tomatoes. Since I didn’t grow up with a backyard garden, I’m feeling industrious like Laura Ingalls every time we pick something to use for dinner!
To say we are about to be inundated with tomatoes is an understatement. If you live near me, you may be getting a happie at your door this week!
Lainey was so proud of all the “tuh-nae-does” we picked this week. Love this child.
I started a list of things to make with tomatoes and remembered that my mom has been raving about “Tomato Tart” for years, and oh my goodness, it turned out heavenly! The fresh basil puts this pie over the top…
With just a few fresh ingredients, a simple summer meal comes together!

Fresh Tomato Pie, or “Tomato Tart,” can be served as a main dish for a light meal, as a side with most any meat (it would be especially delicious with steak or fried chicken), or as a breakfast or brunch addition!
Fresh Tomato Pie
1 unbaked pie crust (I prefer refrigerated Pillsbury)
8 oz shredded mozzarella cheese
1/4 cup chopped onion
2 T. chopped, fresh basil
2-3 fresh tomatoes, peeled and cut into thin slices
1/2 t. salt
1/4 t. pepper
1/8 cup olive oil
1/3 cup fresh, grated Parmesan cheese
Preheat oven to 400 degrees.
Using a very sharp knife, peel and slice tomatoes. Lay the tomatoes on top of two layers of paper towels. Sprinkle tomatoes with a dash of salt and place one more layer of paper towels on top of tomatoes. Leave tomatoes to drain while you prep the other ingredients. This will prevent your pie from becoming too watery.
*Optional…To help cut the strong raw onion flavor in the pie, toss the chopped onion in about a teaspoon of hot olive oil for a couple of minutes before adding to pie.
For best flavor, use fresh parmesan cheese grated with a Microplane Zester, like this one!
Layer all ingredients in pie crust in order listed.
Bake at 400 degrees for 30 minutes.
Allow pie to stand for 5 minutes before slicing.
